Coffee Biotechnology and Quality is a comprehensive volume containing 45 specialised chapters by internationally recognised experts. The book aims to provide a guide for those wishing to learn about recent advances in coffee cultivation and post-harvest technology. It provides a quantitative and rational approach to the major areas of coffee research, including breeding and cloning, tissue culture and genetics, pest control, post-harvest technology and bioconversion of coffee industry residues into commercially valuable products. The chapters review recent experimental work, allowing a conceptual framework for future research to be identified and developed. The book will be of interest to researchers and students involved in any area of coffee research. Consequently, plant breeders, microbiologists, biotechnologists and biochemical engineers will find the book to be a unique and invaluable guide.

Algebraic K-theory describes a branch of algebra that centers about two functors. K0 and K1, which assign to each associative ring ∧ an abelian group K0∧ or K1∧ respectively. Professor Milnor sets out, in the present work, to define and study an analogous functor K2, also from associative rings to abelian groups. Just as functors K0 and K1 are important to geometric topologists, K2 is now considered to have similar topological applications. The exposition includes, besides K-theory, a considerable amount of related arithmetic.

Interest in studying the phenomena of convective heat and mass transfer between an ambient fluid and a body which is immersed in it stems both from fundamental considerations, such as the development of better insights into the nature of the underlying physical processes which take place, and from practical considerations, such as the fact that these idealised configurations serve as a launching pad for modelling the analogous transfer processes in more realistic physical systems. Such idealised geometries also provide a test ground for checking the validity of theoretical analyses. Consequently, an immense research effort has been expended in exploring and understanding the convective heat and mass transfer processes between a fluid and submerged objects of various shapes. Among several geometries which have received considerable attention are plates, circular and elliptical cylinders, and spheres, although much information is also available for some other bodies, such as corrugated surfaces or bodies of relatively complicated shapes. The book is a unified progress report which captures the spirit of the work in progress in boundary-layer heat transfer research and also identifies potential difficulties and areas for further study. In addition, this work provides new material on convective heat and mass transfer, as well as a fresh look at basic methods in heat transfer. Extensive references are included in order to stimulate further studies of the problems considered. A state-of-the-art picture of boundary-layer heat transfer today is presented by listing and commenting also upon the most recent successful efforts and identifying the needs for further research.

The food industry, with its diverse range of products (e.g. short shelf-life foods, modified atmosphere packaged products and minimally processed products) is governed by strict food legislation, and microbiological safety has become a key issue. Legally required to demonstrate 'due diligence', food manufacturers are demanding analytical techniques that are simple to use, cost effective, robust, reliable and can provide results in 'real time'. The majority of current microbiological techniques (classical or rapid), particularly for the analysis of foodborne pathogens, give results that are only of retrospective value and do not allow proactive or reactive measures to be imple mented during modem food production. Rapid methods for microbial analysis need to be considered in the context of modem Quality Assurance (QA) systems. This book addresses microbiologists, biochemists and immunologists in the food industry, the public health sector, academic and research institutes, and manufacturers of kits and instruments. This volume is an up-to-date account of recent developments in rapid food microbiological analysis, current approaches and problems, rapid methods in relation to QA systems, and future perspectives in an intensely active field.
