Instructors Manual For Dietetics

Abstract: Guidelines are presented to assist nutrition educators in the development and establishment of a nutrition education course at the college level; the manual is intended for use with the textbook: "Fundamentals of Normal Nutriton". Topical outlines are given for 4 different 30-hour courses for 3 categories of students: non-majors having little-to-no science background; technical majors; and professional majors; (2 outlines) in nutrition, food science, dietetics, food technology, premedical, or biology. Additional guidance is provided for: selecting various nutrition education methods; types of assignments for students; continual evaluation of student dietary habits; and detailed activities and key points for specific, important nutrition topics for each of the 30 chapters of the textbook. A tabulation and description of 102 available audiovisual materials correlated to the textbook chapters is appended. (wz).
