This book contains the papers presented at a meeting sponsored by the Colloid and Interface Science Group of the Faraday Division, Royal Society of Chemistry, which was held at Wills Hall, University of Bristol from the 14th - 16th April 1997. The pur pose of the meeting, which was entitled Colloidal Dispersions, was to discuss the subject of concentrated colloidal systems including, dispersions, emulsions and powders, in order to emphasize recent advances in experimental and theoretical understanding of these systems and how these advances could be applied to practical utitisation in the wide range of industries which are involved with colloidal systems. The papers presented at the meeting were given by the principal participants in a 5 year project on Colloid Technology, which started on the 1st August 1992, and was funded by the Department of Trade and Industry (DTI) of the U.K. and a consortium of industries which was composed of ICI, Schlumberger, Unilever and Zeneca. The academic centres involved were, the Universities of Bristol, Cambridge, Edinburgh and Imperial College, London. Each of the papers published in this volume formed the focus for a discussion on that topic so that each subject was discussed in so me depth by the participants. J ean Proctor and Meg Staff have been tremendously helpful as secretaries at Bristol and Cambridge respectively throughout the project. Also, their help with the various meetings and with the production of this volume was invaluable. We thank them most warmly for their very able assistance.

Emulsions occur either as end products or during the processing of products in various areas, including the food, agrochemical, pharmaceutical, paint & oil industries. Despite over one hundred years of research in the subject, however, a quantitative understanding of emulsions has been lacking. Modern Aspects of Emulsion Science presents a comprehensive description of the scientific principles in the field & the very latest advances in research in this important area of surface & colloid science. Topics covered include emulsion formation, type, stability (creaming, flocculation, ripening, coalescence), monodisperse & gel emulsions, & applications. Emphasis has been placed on relating the chemistry of the surfactant or protein adsorbed at the oil-water interface to the principles of the physics involved in the bulk emulsion property. The book has been written by leading experts in the field & covers both experimental & theoretical approaches. The only book in print on this topic, it will prove essential reading for graduate students & researchers in industry. Contents: Emulsions - Recent Advances in Understanding.- Emulsion Formation.- Emulsion Formation by Nucleation & Growth Mechanisms.- Emulsion Flocculation & Creaming.- Rheology of Emulsions - The Relationship to Structure & Stability.- Phase Inversion & Drop Formation in Agitated Liquid-Liquid Dispersions in the Presence of Nonionic Surfactants.- Coalescence in Emulsions.- Lifetime & Destruction of Concentrated Emulsions Undergoing Coalescence.- Molecular Diffusion in Emulsions & Emulsion Mixtures.- Interactions & Macroscopic Properties of Emulsions & Microemulsions.- Gel Emulsions - Relationship between Phase Behaviour & Formation.- Applications of Emulsions.- Subject Index.

From blood to milk, pumice to gelatine, most scientists interact with colloids on a daily basis without any real knowledge of their nature. Building on the success of the first edition, Colloids and Interfaces with Surfactants and Polymers Second Edition is a user-friendly, non-technical introduction to colloids and interfaces. Includes: Many practical examples of colloid and interface science An enhanced section on fluorescence microscopy, a widely used technique in biological systems for the optical imaging of cellular structures A new section on phenomenology (the principle of time/temperature superposition), which enables the experimentalist to extend the frequency range of their rheological instruments New information on sedimentation and strategies for the control of sedimentation, which is critical in many dispersions of commercial importance Fresh treatments of traditional theoretical topics like the electrical double-layer, colloidal interactions, wetting behavior and light scattering, as well as more recent advances in polymer science, statistical mechanics and the use of neutrons In-depth discussions of widely used techniques with mathematics used in a straight-forward way so quantitative descriptions of colloid and interface properties can be derived Colloids and Interfaces with Surfactants and Polymers Second Edition explains all the fundamental concepts of colloids and interfaces as well as detailing some of the more advanced aspects which might be useful in specific applications. Intended for undergraduate and graduate courses in colloids and soft materials, the book is also relevant to those in the chemical, coatings, cosmetics, ceramics, food, pharmaceutical and oil industries. This fundamental book on interfacial phenomena forms the basis of application of interface and colloid science to various disperse systems. These include suspensions, emulsions, nano-dispersions, wetting, spreading, deposition and adhesion of particles to surfaces. These systems occur in most industrial applications, such as personal care and cosmetic formulations, pharmaceutical systems particularly for controlled and targeted delivery of drugs, agrochemical formulations and enhancement of their biological performance, paints and coatings as well as most food formulations. These applications are described in volume 2. The text is very valuable for formulation chemists, chemical engineers and technologies who are involved in such applications. In addition this fundamental text is also valuable for research scientists and Ph.D. students investigating various aspects of interface and colloid science.
