Good quality seed is the most important component in production technology of crops. Farmers in India are aware of the importance of good quality seeds and trade liberalization has resulted in flourishing of vegetable seed industry in India. Seed production has become a lucrative business for the private sector which is evidenced from mushrooming of seed companies in India. While the public sector is by and large concentrating on the low-cost technology such as production of open pollinated varieties, private firms are after the production of F1 hybrids which ensure market protection. Tuber crops are important from food security point of view and seed tuber pr oduction of virus free potato is a challenging task. Since most of the spices are vegetatively propagated, ensuring virus free quality planting materials require knowledge and skill. Theory and practice of seed production of vegetable crops, tubers and spices need to be updated and available for all stake holders in seed industry and farm sector.

This volume discusses the nutraceutical importance, production technologies, management and cultivation practices of underutilized vegetables, which can be described as those vegetable crops which are neither grown commercially on a large scale nor traded widely. While much of the crops addressed in the book are cultivated, traded and consumed at the local level, there are over 60 species of minor vegetables with high growth and yield potentials that are not cultivated to a large extent for greater populations. This work highlights the production technologies needed to grow these vegetables on a larger scale and under various adverse soil and climatic conditions, and their nutritional and medical benefits to assist with food security, health and poverty alleviation in rural areas. Production of underutilized vegetables is low, due to the unavailability of planting material, lack of awareness about the nutritional and medicinal importance among the farmers and inadequate information on the production techniques of these crops. In this context, there is an urgent need to take up a program on genetic resources exploration, management, utilization, and improvement of underutilized vegetable crops to ensure food and nutritional security. This volume consists of two parts. Part 1 comprises 6 chapters concerning the principles and practice of tropical vegetable production (including site, topography, soils and water; site management, seeds and types of cultivars; support for farmers; crop preparation and management; reducing pre- and postharvest losses and marketing surpluses). In Part 2, the crops have been mainly dealt with according to their taxonomy as botanical families, either as single or groups of families per chapter. These include: Alliaceae; Cruciferae [Brassicaceae]; Cucurbitaceae; Solanaceae; Leguminosae; leafy vegetables; Araceae, Convolvulaceae, Dioscoreaceae, Euphorbiaceae; Andean tubers and roots and crops of the Lamiaceae and Apiaceae; and Gramineae [Poaceae] and Cyperaceae. Examples of the indigenous species which can be regarded as important sources of edible vegetative materials which are not dealt with in the main text have been listed in Appendix 1.
