As health problems such as obesity, heart disease and diabetes increase in many developed and developing countries, the food industry has come under mounting pressure to improve the nutritional quality of its products. Particular attention has focused on the health problems associated with saturated fats in food and on the potential health benefits of increasing monounsaturated and polyunsaturated fat content. Summarising key research in this field, this important collection reviews both the influence of dietary fats on health and practical strategies for improving the fat content of food products. Part one reviews the evidence on the links between dietary fats and health. There are chapters on the links between saturated fatty acid intake, obesity, coronary heart disease, diabetes and cancer, as well as the health benefits of monounsaturated fats, polyunsaturated fatty acids (PUFAs) and conjugated linoleic acids (CLAs). Part two then discusses ways of reducing saturated fatty acids in food. After the experience of the first volume, The World Association for Animal Production (WAAP) continues the publication of the Book of the Year series for the benefit of animal scientists and policy makers in the field of livestock systems. The WAAP asked the best known and significant animal scientists in the world to contribute to the preparation of this book. Following the success of the first volume of the series, the WAAP Book of the Year 2003, many authors from the six continents are contributing to this 2nd volume. The importance of this publication is to have already established a worldwide reference for the animal science and production sectors. There are the usual four sections that raised much interest in the previous volume of the series. This book and its case studies focuses on typical local products and breeds, descriptions of the production systems and conservation techniques of endangered breeds/products in the Mediterranean area. Traditional and extensive systems, involving local breeds, which meet the needs of the population requiring safe foods at a reasonable costs, are validated for their specific meaning to the region. It is acknowledged that natural constraints of the Mediterranean area of climate and geography, make it unfavourable to mass production at low cost. Profit related aspects are discussed considering the different economic realities of the northern part of the basin compared to the southern part. Characteristics of typical animal production with consideration for positive and negative impacts on production systems and on the environment as well as the need to adjust to climate uncertainty and seasonal variability of feed resources, is also discussed. A focus is given to the following areas: animal production economy and social impact in the Mediterranean area; utilisation of natural resources and environmental impact of the animal production systems; possibilities for improving traditional systems; quality and traceability of typical products; moving from traditional to certified animal products.
