This book discusses the role of food and the human nutrition-behavior interface. Food makes us what we are, but in addition to providing adequate nutrition, does it influence behavior? This book looks at this critical question from various angles and considers different concepts and approaches to food, nutrition and well-being. To better understand the entire gamut of the food-behavior linkage, the author unravels the workings of the mind - brain link. Human Resilience against Food Insecurity focuses on the human factors involved in building resilience against food and nutrition insecurity in perpetuity through better managing risks (such as ‘better-spacing’ of children), diversifying the asset portfolio, behavioral change, and communication strategies for to help achieve these goals. The better the coherence and convergence amongst these human factors that promote sustainable food and nutrition security, the lower the need to rectify their absence through post-facto, unsustainable ‘firemen’s work’ of humanitarian assistance and CMAM clinics. The book includes references to countries which are not in the lowest of the categories prescribed in the UNDP Human Development reports, also including minority groups in developed countries, such as the hunter-gatherer Inuit communities of Canada, to provide an inclusive view of the issues and concerns relevant to addressing food insecurity. The Role of Food, Agriculture, Forestry and Fisheries in Human Nutrition is a component of Encyclopedia of Food and Agricultural Sciences, Engineering and Technology Resources in the global Encyclopedia of Life Support Systems (EOLSS), which is an integrated compendium of twenty one Encyclopedias. Human health and wellbeing depend strongly on production, quality, and availability of food. Agriculture, or cultivation of the soil, harvesting crops, and raising livestock, which are the main sources of food, has no single origin. At different times and in numerous places, many plants and animals have been domesticated to provide food for humankind. Fishing, like farming, is a form of primary food production. Agroecology not only encompasses aspects of ecology, but the ecology of sustainable food production systems, and related societal and cultural values. To provide effective communication regarding status and advances in this field, connections must be established with many disciplines such as sociology, anthropology, environmental sciences, ethics, agriculture, economics, ecology, rural development, sustainability, policy and education, or integrations of these general themes so as to provide integrated points of view that will help lead to a sustainable construction of values. Such designs are inherently complex and dynamic, and go beyond the individual farm to include landscapes, communities, and biogeographic regions by emphasizing their unique agricultural and ecological values, and their biological, societal, and cultural components and processes.

Our food experiences can be significantly influenced by both intrinsic and extrinsic multisensory information. Therefore, it is crucial to understand and apply the principles that govern the systematic connections that exist between the senses in the context of Human-Food Interaction (HFI). In our Research Topic, namely Multisensory Human-Food Interaction (MHFI), several studies that consider such connections in the context of HFI are presented. We also have contributions that focus on multisensory technologies that can be used to share and reproduce specific HFIs. This eBook, which resulted from the Research Topic, presents some of the most recent developments in the field of MHFI. In particular, it consists of two main sections and corresponding articles. The eBook begins with the Editorial, which provides an overview of MHFI. Then, it includes six articles that relate to principles in MHFI and three on technologies in MHFI. We hope that the different contributions featured here will support future developments in MHFI research.
