La vocation de Michel Kéréver pour la cuisine gastronomique est née dans la poissonnerie de sa mère à Rennes. Très vite, les poissons, les crustacés et les coquillages de sa Bretagne natale n'ont plus eu de secrets pour lui. De chef en chef, de fourneau en fourneau, de cuisine en cuisine, dans les plus grands palaces d'Europe, il finit par poser ses valises au Lion-d'Or à Liffré, en Ille-etVilaine, où il obtient 2 étoiles au guide Michelin et 3 toques au guide Gault et Millau ; un peu plus tard, en 1981, on lui propose d'ouvrir le restaurant Le Duc d'Enghien à Enghien-les-Bains. Il nomme à la tête de la brigade un jeune chef et ancien élève du Lion-d'Or : Alain Passard. A quatre mains, ils obtiendront, en 1983, 2 étoiles au guide Michelin et 3 toques au guide Gault et Millau. C'est aussi le début d'une belle carrière pour Alain Passard.
