Diet significantly affects athletic performance, and adoption of a dietary strategy that meets an athlete’s nutrition goals will maximize the possibility of competitive success. Over the years, the focus has shifted from a high intake of (animal) protein to the role of carbohydrate and water. Today, there is a growing recognition that the primary role of sports nutrition may be to promote the adaptations taking place in muscle and other tissues in response to the training stimulus. There is also much interest in the implications of manipulation of the fat and carbohydrate content of the diet. This publication contains the proceedings of the 69th Nestlé Nutrition Institute Workshop held in Hawaii in October 2010. The aim of the workshop was to explore the effects of nutritional manipulations on the metabolic responses to acute and chronic exercise. Another goal was to further identify the possible role of these dietary interventions in promoting adaptive changes in muscle, adipose tissues and other potential sites of limitation to exercise performance. Papers cover the three macronutrients carbohydrate, fat and protein, plus an additional chapter on water, together with the accompanying discussions.

Advancements in Polymer-Based Membranes for Water Remediation describes the advanced membrane science and engineering behind the separation processes within the domain of polymer-based membrane systems in water remediation. Emphasis has been put on several aspects, ranging from fundamental concepts to the commercialization of pressure and potential driven membranes, updated with the latest technological progresses, and relevant polymer materials and application potential towards water treatment systems. Also included in this book are advances in polymers for membrane application in reverse osmosis, nanofiltration, ultrafiltration, microfiltration, forward osmosis, and polymeric ion-exchange membranes for electrodialysis and capacitive deionization. With its critical analyzes and opinions from experts around the world, this book will garner considerable interest among actual users, i.e., scientists, engineers, industrialists, entrepreneurs and students. Evaluates water remediation using pressure driven and potential driven membrane processes Reviews emerging polymer systems for membranes preparation Offers a comprehensive analysis in the development of polymer-based membranes and their applications in water remediation Analyzes membrane performance parameters to evaluate separation efficiency for various water pollutants Covers concept-to-commercialization aspects of polymer-based membranes in terms of water purification, pollutant removal, stability and scalability

About 150 years ago, the engineers and physicists used the calorie to measure the amount of energy required to heat one kilogram of water one degree Celsius. Trying to determine the energy consumption of the human body, scientists burned in the calorimeter various substances (including food, drinks, and excrements) and measured the difference in water temperature. This is how we ended up with 9 Calories per gram for fat and 4 Calories per gram for protein and carbohydrates. That's why water is the only substance that has "Zero Calories," and this is how the calorie found its niche in nutrition. Yet, have you ever wondered... Why the Calorie is supposed to be capitalized when referring to the energetic value of foods and drinks? Why there are 2,000 Calories per day used for general nutrition advice (and not 1,500, 2,400, 2,700, or any other value)? What the claims found on the food labels actually mean? Which carbs are "good," which ones are "bad," and why we witness a global epidemics of overweight, obesity, and diabetes? What's the difference between saturated and unsaturated (mono- poly-, trans-, and interesterified) fat? Is there such a thing as a perfect diet? Why in the countries that have adopted the Metric System the energy is expressed in kilojoules and not in Calories? How much energy (whether expressed in kilocalories or kilojoules) a person needs a day? This book proposes to find an answer to the above questions (and many others) by connecting the information from various fields of science, including Physics, Chemistry, Biology, and Thermodynamics.
