Space And Food In The City

Urban social movements are influential agents in shaping cityscapes to reflect values and needs of communities. Alongside urban population growth, various forms of urban agriculture activity, such as community and market gardens, are expanding, globally. This book explores citizens’ ‘rights to city’ and alternative views on urban space and the growing importance of urban food systems.

CULINARY LESSONS - The Space of Food is based on a series of events, Culinary Lessons, which were hosted by the Städelschule Architecture Class and which engaged with the relation between food, art and architecture. The series addressed the enormous so- cial, economic and cultural spaces that accompany the production and consumption of food, and attempted to unravel some of these spaces' structure and dynamics. The central ambition was to learn from culinary history and, not the least, the recent vanguard of culinary practice. No human activity is so encompassing and engenders such ef- fects on our societies and lives as the culinary. Culinary practices lay out aesthetic as much as ethical trajectories that span from century-old traditions to lifesaving experiments for the present and future. They provide for human sustenance and the highest form of bodily enjoyment while transversing the spaces that they at once produce and profoundly affect. This fourth issue of the SAC JOURNAL presents the central con- versation in Culinary Lessons, which took place in Venice, together with a series of texts and projects that chart and speculate on the relationship between architecture, art and the culinary wor- ld. Contributors to this issue include, amongst others, Charlotte Birnbaum, Daniel Birnbaum, Mike Bouchet, Sanford Kwinter, Fabrice Mazliah, Tobias Rehberger, David Ruy, Kivi Sotamaa, Carolyn Steel, Jan Åman and Johan Bettum. It also features the winning projects of the AIV Master Thesis Prize in 2015 and 2016. SAC JOURNAL is a publication series that addresses topical isues within architecture. The journal documents, critically reviews and presents theoretical discussions concerning contemporary design and research. The content of SAC JOURNAL is produced by invited contributors and students and faculty at the Städel- schule Architecture Class.

Faced with a global threat to food security, it is perfectly possible that society will respond, not by a dystopian disintegration, but rather by reasserting co-operative traditions. This book, by a leading expert in urban agriculture, offers a genuine solution to today’s global food crisis. By contributing more to feeding themselves, cities can allow breathing space for the rural sector to convert to more organic sustainable approaches. Biel’s approach connects with current debates about agroecology and food sovereignty, asks key questions, and proposes lines of future research. He suggests that today’s food insecurity – manifested in a regime of wildly fluctuating prices – reflects not just temporary stresses in the existing mode of production, but more profoundly the troubled process of generating a new one. He argues that the solution cannot be implemented at a merely technical or political level: the force of change can only be driven by the kind of social movements which are now daring to challenge the existing unsustainable order.Drawing on both his academic research and teaching, and 15 years’ experience as a practicing urban farmer, Biel brings a unique interdisciplinary approach to this key global issue, creating a dialogue between the physical and social sciences

Globalization of the food supply has created conditions favorable for the emergence, reemergence, and spread of food-borne pathogens-compounding the challenge of anticipating, detecting, and effectively responding to food-borne threats to health. In the United States, food-borne agents affect 1 out of 6 individuals and cause approximately 48 million illnesses, 128,000 hospitalizations, and 3,000 deaths each year. This figure likely represents just the tip of the iceberg, because it fails to account for the broad array of food-borne illnesses or for their wide-ranging repercussions for consumers, government, and the food industry-both domestically and internationally. A One Health approach to food safety may hold the promise of harnessing and integrating the expertise and resources from across the spectrum of multiple health domains including the human and veterinary medical and plant pathology communities with those of the wildlife and aquatic health and ecology communities. The IOM's Forum on Microbial Threats hosted a public workshop on December 13 and 14, 2011 that examined issues critical to the protection of the nation's food supply. The workshop explored existing knowledge and unanswered questions on the nature and extent of food-borne threats to health. Participants discussed the globalization of the U.S. food supply and the burden of illness associated with foodborne threats to health; considered the spectrum of food-borne threats as well as illustrative case studies; reviewed existing research, policies, and practices to prevent and mitigate foodborne threats; and, identified opportunities to reduce future threats to the nation's food supply through the use of a "One Health" approach to food safety. The challenges rapid urbanisation encompasses are manifold, so are the efforts addressing sustainable and inclusive development frameworks. "Reclaiming Public Space through Intercultural Dialogue" is an intercultural and interdisciplinary initiative, which focuses on how social and spatial segregation can be overcome in metropolitan areas. Through joint research and teaching activities in the cities of Dortmund and Amman, three comprehensive topics emerged: urban transformation and the role of public space; social and cultural dimensions of cities; and nature-based planning approaches. The book compiles contributions to these topics from researchers, practitioners, and students, which were presented in an international conference held at the German Jordanian University in Madaba, Jordan, in November 2017.

Around the world, a new architectural form is emerging. In public places a progressive architecture is being commissioned to promote open-ended, undetermined, lightly programmed or un-programmed interactions between people. This new phenomenon of architectural form – Pavilions, Pop-Ups and Parasols – is presaged by rapidly changing social relationships flowing from social media such as Facebook, Twitter and Instagram. The nexus between real and virtual meeting is effectively being reinvented by innovative and creative architectural practices. People meet in new and responsive ways, architects meet their clients in new forums, knowledge is ‘met’ and achieved in new and interactive frameworks. It contrasts bluntly with the commercially structured interactions of shopping malls and the increasingly deliberate interactions available in cultural institutions. These experiences imbue a new type of client; casually engaged, flocking, hacking, crowd funding and self-helping. Accepting the challenge of rethinking connections of food, space and identity within everyday spaces of “public” eating in Malaysia and Singapore, the authors enter street stalls, hawker centers, markets, cafes, restaurants, “food streets,” and “ethnic” neighborhoods to offer a broader picture of the meaning of eating in public places. The book creates a strong sense of the ways different people live, eat, work, and relax together, and traces negotiations and accommodations in these dynamics. The motif of rojak (Malay, meaning “mixture”), together with Ien Ang’s evocative “together-in-difference,” enables the analysis to move beyond the immediacy of street eating with its moments of exchange and remembering. Ultimately, the book traces the political tensions of “different” people living together, and the search for home and identity in a world on the move. Each of the chapters designates a different space for exploring these cultures of “mixedness” and their contradictions—whether these involve “old” and “new” forms of sociality, struggles over meanings of place, or frissons of pleasure and risk in eating “differently.” Simply put, Eating Together is about understanding complex forms of multiculturalism in Malaysia and Singapore through the mind, tongue, nose, and eyes.
