Excerpt from The Home Preservation of Fruits and Vegetables To prepare beans for canning, wash freshly picked beans thoroughly, remove strings and break in desired lengths. Avoid using old beans or any with blemishes as this frequently causes cans to spoil. Tie the beans in a cheese cloth bag and blanch from five to eight minutes in boiling water. Remove and plunge in cold water. Pack in glass jars up to the neck; fill to overflowing with hot water and add one-half teaspoon of salt to one pint jar. Place rubbers and tops on jars but do not clamp top down. About the Publisher Forgotten Books publishes hundreds of thousands of rare and classic books. Excerpt from Home and Farm Food Preservation Since early historical time food preservation has been second only in importance to food production. Grapes and other fruits were dried by the ancients to preserve them; fruit juices were fermented to make wines and Vinegars; cereals and vegetables were stored to protect them against moisture and decay; olives were preserved by salting; and meats were salted, dried, and smoked. The use of sugar and vinegar in preserving fruits and vegetables came later. The preservation of foods by sterilization in sealed containers is a development of the nineteenth century and dates from its discovery by Nich olas Appert in France about 1800. Cold storage, as a means of preserving all perishable products, has, during the past century, developed into a very great industry. Excerpt from Fruit and Vegetables: Canning, Drying, Storing By eating fruit and vegetables freely while they are in season, and by canning, drying or storing our surplus for winter use, we can release more wheat and other foods for shipment overseas. At the same time we can reduce our own cost of living. Fruit and vegetables are conducive to health, and greater and more regular use of them throughout the year would have positively beneficial effects. But these are perishable foods and in order to avoid very great waste - which would be little short of criminal, in view of the situation in Europe - they must be handled promptly and carefully. This booklet is intended to give simple, definite and reliable information for the guidance of those who are willing to do their part in saving for winter use our harvest of fruit and vegetables, and especially the home grown produce. Excerpt from Home Vegetables and Small Fruits: Their Culture and Preservation Thrift, that homespun Virtue, formerly the sole ornament of the dwellings of the worthy poor, has unexpectedly become popular, like a bit of old china which had adorned a shelf in a humble cot tage or es en served a simple use and, suddenly grown fashionable, finds itself seized Upon, polished, and treated with unexampled respect as a prize for a fashionable collector. Thrift is no longer a hum ble flower to bloom unseen; it has become the chief flower of the garland. Young women, who, a few years ago, would have scorned to know anything more of a garden than the silver-bells and cockle shells of Mistress Mary, now take a passionate and heartfelt interest in the welfare of humble potatoes and cabbages. Of course, much of this interest is ephemeral and will pass when the exigency has passed and when thrift is out of fashion, but much is not, and the wave of thrift, however temporary, is destined to leave its mark on our gardening. Except for the gardens of the French nobility be fore the Revolution, I doubt if the gardens in any country were as thriftless as ours before 1917. This was true not so much of the gardens belonging to the great estates - in fact, these and most large garden places were fairly sure to have also excellent kitchen-gardens - but the suburban gardens, whether the owner possessed small or large means, these in a tremendous proportion were planted without any idea whatever of their making themselves useful. In fact, the garden much resembled the Early Victorian heroine - decorative, but never by any possibility useful. Grounds, however small, were sacred to the class known as ornamentals. An existing apple or cherry tree, the survival of an earlier day, might, it is true, be respected or even prized, but the modern owner planted no such humble garden folk; rather his choice was for the Colorado spruce, the Japanese maple, or the ubiquitous Catalpa Bungei.
