Abstract: A diet manual incorporating current diet therapy concepts and recent research on nutritional management is presented for use by medical and dietary personnel in health care facilities. Therapeutic and special diets are arranged in 8 tabulated sections: standard hospital diets; pediatric nutrition; modified consistency and gastrointestinal diets; calorie, protein, fat, and sodium controlled diets; and miscellaneous and test diets. Diets reflect revised recommendations of the American Diabetes and Heart Associations where applicable, and meet RDAs unless otherwise noted. A physician's guide facilitates the ordering of diets for specific diseases. Cooperation between physician and dietitian is encouraged to optimize nutritional care of the patient. A diet as tolerated policy, rather than rigid food restrictions, is recommended. Appendices provide supplementary information on weight-for-height, weights and measures, nutrients, food composition, and sodium, potassium, magnesium, and caffeine content of foods and beverages.
